Cuban Style Black Beans

When I prepare home cooked meals, I like to give them that restaurant feel.  You know, where you get at least two sides to go along with your main dish.  It makes me feel complete…and a tad bit fancy :)

The other night I whipped up a batch of these amazing enchiladas (honestly, best darn things ever!).  And of course I had to serve something on the side.  When it comes to Mexican food, I like to keep it traditional.  Beans and rice.  I was thinking about making some green rice, but opted for a new recipe of Mexican Rice instead.  Another winner :)  But when it came to the beans, I decided to turn to an old favorite.

I have been making this recipe since Freddie and I first got married.  It was one of my first successes in the kitchen and it continues to do me right each and every time.


2 tbsps olive oil

1 tsp minced garlic

1 15.5 oz can black beans, drained

1 bell pepper, chopped

1/2 onion, chopped

6 oz light beer

Handful of chopped cilantro


Heat the oil in a skillet over medium heat.  Cook the garlic in the oil for 15 seconds.  Stir in the onion and bell pepper.  Cook for 10 minutes, stirring occasionally.  Pour in the black beans and beer, simmer until thick (about 15 minutes).  Stir in cilantro and serve.

When it comes to flavor, these beans can’t be beat!  What I love most is the sweetness you get from the beer.  Truth be told, I have never been a beer drinker, but when it comes to cooking with it, I can’t get enough.  I used to buy an entire 6 pack, only to have the rest of the bottles sit in my fridge until the next time I was preparing this dish.   But I recently learned that some stores, like Whole Foods, actually let you buy just one.  Perfect!

These beans are so much more than a side dish.  Enjoy them over a bed of brown rice with some avocado slices for an afternoon snack, or throw them into a salad for a Southwestern flare.  The possibilities are endless.

So whether you are celebrating fiesta style or looking for a nice vegetarian protein fix, you can’t go wrong with a delicious dish of drunken beans :)

    I have all the ingredients, minus the beer. But I think I’m still going to give it a try over brown rice!
