What’s in the Box? #61

Four full days of being a “single mom” while Freddie was away on business and I am officially pooped.  Not only was I 100% responsible for my little nugget, but I was teaching 2 classes a day, preparing my Fresh Start meals, keeping the house clean and attempting to blog.  Phew!  I need a vacation.  Welcome home Da-da…can mommy take a nap?

But before I go and close my eyes, let’s take a quick look at last week’s party participants.  We had 5 delicious link ups and clearly these ladies aren’t messing around.  I mean Beet Pizza Crust, Broccoli Salad (with bacon…), and Flemish Beef Stew…we’re eating good in this neighborhood :)  Thank you for sharing your yummy goodies with the rest of the party.  Keep the good food coming!

Speaking of good food…can’t wait to get busy with this lovely produce.

What's in the Box? #61- In Her Chucks

Strawberries again?  Makes my Valentines Day that much more sweet.  I sliced a few up for last nights dessert and plan on incorporating them into as many meals as possible.  I LOVE strawberries :)

I also got 2 big bunches of beets!  Oh, the possibilities.  After seeing Kirsten’s Beet Pizza Crust, it makes me want to dabble in some “dirty” eating (as she so eloquently wrote in my comments…).  But let’s be real, beet pizza crust is a far better choice than plain pizza crust, right?  As far as nutritional value goes…(I’m doing my best to justify my future choices…).

Did you see what else I got two bunches of?  That’s right…kale!  Two bunches of the most beautiful Red Russian Kale you have ever seen.  I will most definitely put one of them to use with some of my meals this week and the other might just end up in soup that I plan to make for a friend.

And then of course there are those amazing sugar snap peas.  They are such a delicious treat.  Perfect timing for an upcoming date night with the hubs.  These Pork Chops andSugar Snap Peas with Mint Julep Glaze should hit the spot.

As far as my Fresh Start Challenge goes, the rest of the box will work great for my final few days of meals.  I have another fruit salad coming up where I plan on using the oranges and apples, a few salads that I can use this lettuce for and the carrots and garlic will come in handy for another batch of Tomato Basil Bisque (which means I might even get a chance to share the recipe!).

Hope you all have a wonderful Valentine’s Day.  I will be celebrating my 4 year wedding anniversary with my two loves…cheers!

    Solo parenting is hard, especially when it’s far out of your normal routine. I find it helps to prioritize (and a clean house is low on my priority list LOL!). I’m mentally swinging back into solo parenting mode for my spouse’s upcoming time away.

    I would love to suggest some recipes for your produce, but since I’m not sure the particulars of your clean eating, most of what I’d suggest is probably dirty.

    Just let me say that if you post a recipe on your blog using Red Russian Kale, and another recipe using Broccoli Rabe, you’ll get all sorts of Russian porn sites as your audience in your stats counter. Apparently people googling “cute russian rabe” leads you to my blog . . .

    I’ve linked up 3 savory uses for my CSA farm share produce: since today is Valentine’s day and I’m still all up in all things pink, some beet and horseradish muffins and a roasted beet, caramelized onion, and goat cheese pizza. Also, since my spouse and I are the mushroom lovers in the house, a quick skillet mushroom dip for two.

  3. Oh wow. I can’t imagine spending loads of time watching a little one alone. Glad your single parenting time went well.

    And that kale looks gorgeous – love seeing what everyone gets in their CSA boxes – we’re getting kimchee in ours today!

    I just learned about kale chips lately! Yummy, if I had this box I would be making them again. Although I saw a simple salad made with kale this last week. It looked really good too. I need to start back up with the co-op boxes again. I really enjoyed the creative mood it put me in.

  5. Ugh, I’ll be solo parenting next week for 5 days. Fun! I think I might have my mom talked into visiting for a few days though :-) I’m so jealous of your strawberries! I haven’t seen any good organic strawberries in our area yet. Anticipating strawberry season for sure!

  6. Another beautiful box, and the Russian Kale is gorgeous. I know you’re doing the clean eating, but might I suggest a juice with your beets, some oranges, and a couple of carrots. It’s really good, and I’d call it clean.
