After a fun and relaxing few weeks in the beautiful island of Ireland, Harper and I are back on American soil. And just in time for America’s big day! The 4th of July is a special holiday in my family. I talk about it all the time, but having family members in the armed forces, helps me to realize how very blessed we are to live in the US. And this year our celebration is even more special because Harper and I are honoring our nation’s birthday with my brother and his wife on a real life military base. I am sure it will be a holiday to remember. So in honor of Independence Day, the theme for this week’s Recipe Roundup is red, white and blue!
But before we jump into the festive and colorful food I have waiting for you, let’s take a look at last week’s links. Starting with a Berry Pizza from none other than Kirsten from Farm Fresh Feasts. She never ceases to amaze me with her pizza ingenuity but this week takes the cake…or the pie :) And then, because I have a weakness for both mint and scones, Have Dessert First hooked us up with a Mini White Chocolate Mint Scone recipe that is to die for! Finally, The Novice Gardener is teaching us all how to utilize every inch of our veggies with a delicious recipe for Turnip Leave Thoran. Wow! Now on to a few patriotic dishes. Since Harper and I are still currently traveling and without a box this week, I decided to share some of my favorite CSA inspired Red, White and Blue dishes with all of you. So Happy 4th of July! Hope you enjoy these recipes as much as I do :)
Tomato Basil Bisque: Ok, so you might not be up to eating a warm bowl of soup when it’s 100 degrees outside. Understood. But if you have a garden, or are receiving a CSA share, chances are you have a bajillion tomatoes that need a proper home. This is your solution. It’s hearty, it’s delicious and it’s red :)
Chicken Pot Pie with Biscuit Crumble Topping: Hmmm…another dish you might not consider “summery” but the closest thing I could find to “white” and undeniably American. Plus, it’s packed with fresh veggies. Which makes this dish a sure winner in my book.
The Best Blueberry Pie: I think I finally got it…patriotic, blue and berry filled. Now, this is the perfect 4th of July dish :) Did I mention there is vodka in the crust?
