There are a lot of changes going on in our lives right now. A new job, a new town, new friends. And I think we can all agree that change can be hard. The good news is, that change can bring out the best in us, and open up our eyes to new sites, new sounds and a new way of life. And this quote is a great example of that.
And as big as most of the changes are in our life at the moment, there are some smaller changes occurring as well. Like the delivery day of my CSA. This week, my CSA went from delivering on Tuesdays to delivering on Wednesdays. Now, while that might not explain the tardiness of this post, maybe this next part will.
Before we made the big move up north, I had agreed to play my music at a few events this summer. This weekend is one of those events. Knowing that we were going to leave this morning, and had dinner plans last night, I asked my CSA if I could pick up my box straight from the farm before we hit the road. For one, it gave me an excuse to experience the awe of the land again, and secondly, it meant I would arrive at my girlfriend’s house with a box full of unadulterated veggies that would help inspire our weekly meal plan :)
And thanks to the link party, I am getting my inspiration from a variety of sources. Last week we had a total of 11 link ups. And I never thought I would say this, but I wish I had a bunch of beets on hand right NOW so I could make Tammy’s Red Velvet Brownies. I am also wishing I had some of Annie’s Gai-Lan Chinese broccoli. Has anyone else ever heard of this before? Sounds like it would be a popular veggie in my household :) And finally, where are the blueberries when you need them? Because Kirsten’s got a killer pizza recipe that is sure to blow your mind! Over here on the West Coast, it’s all about the berries…
And I am loving every second of it! Last week I gave this awesome dish a try using the fresh blackberries and it was nothing short of amazing. This week I managed to douse them in homemade whipping cream and I have a feeling those strawberries have a similar fate. It’s all about balance around here :)
For the zucchini and carrots I am going for a repeat. Last week’s turkey burgers were so delicious I am making them again this week. And no doubt the avocados and romaine lettuce will come in handy as awesome toppers.
The bunch of kale will make for a beautiful kale salad and this time I am confident that a post with the recipe is not too far behind.
I am excited to try something new with the spinach this week. Actually it’s an oldie but goodie…oh so goodie.
Another goodie in our household are these Chicken Parm Meatballs. And a bunch of fresh flat leaf parsley is a great excuse to whip up a batch :)
