What's in the Box?


So, let’s jump straight to the chase…how was your Easter?  Was the weather nice?  Was the food good?  Was there an adorable little toddler dressed up on the patio, posing for pictures in her fancy dancy Easter dress?

Well, if you couldn’t tell by the pic, our Easter was lovely!  It started out with huge breakfast complete with a fluffy Hootenanny and homemade sausage, then a lovely trip to church, and finished off the day with a delicious Easter feast with great company.  It was potluck style and I was in charge of dessert (and veggies of course!).  So I brought a Fresh Strawberry Yogurt Cake and 2 batches of Lime Squares with Pistachio and Graham-Cracker Crust (with a side of roasted asparagus and steamed broccoli…eaten with the meal, not the dessert).  Needless to say, we all left with our stomach’s happy and full :)

And from the looks of it, I wasn’t the only one eating well this past weekend.  Last week we had 15 link ups and after reading all their delicious recipes, I think Easter deserves another round.  There was Caramelized Onion Duck Fat Baked Poutine, Pasta with Shrimp and Mint Pesto and Butternut Mole Sauce.  And if that’s not enough for you, Kirsty from Farm Fresh Feasts hooked us up with an Easter 2013 Recipe Round Up.  Next year can’t come soon enough :)  Thanks ladies for all of your delicious dishes.  I appreciate you sharing your farm fresh goodies with the rest of us.

What's in the Box? #68

Holy greens!  They come in all shapes and sizes.  Balls, stalks, leaves and bouquets!  I love greens :)  And I am digging into the Brussels first.  I always do.  They are just too good.  And I am excited to serve them alongside a new recipe that I found for those strawberries.  Even after 2 Fresh Strawberry Yogurt Cakes, daily snacking and some naughty late night indulgences, I still have strawberries coming out of my ears!  And I hate to see them go to waste so I am doing my very best to scarf down all these berries on my own (the hubs isn’t a fan and little miss Harper can only eat so many with her tiny little frame).  Hoping to share the recipe with you soon.

Speaking of Harper and her tiny frame, she has practically barreled through the broccoli on her own.  I steamed it up last night and she barely left any for the grown ups.  I LOVE how much she LOVES broccoli :)  I just wish she would share a little…

I know it’s hard to see from the pic, but that celery, is HUGE!  It barely fit in the box.  And it is perfectly crisp and fragrant.  Not quite sure what I have in store for it except for using it for the usual base of a yummy homemade sauce or soup and an easy snacking option (along with those tangerines…which are almost gone!).

These Turkey Ricotta Meatballs always seem to be my go-to recipe for spinach, but it’s such a hit I can’t resist.  And it has been a while since we made it.  Of course, the meal wouldn’t be complete without a side salad and that beautiful head of romaine lettuce will be perfect!  Might even throw in a stalk of that celery for some extra crunch.

I am determined to make some grapefruit cookies this week.  In fact, Harper promised to help me.  So we plan to get busy (and messy) in the kitchen tomorrow and make it happen.  Recipe coming soon.

Finally, I recently shared this Swiss Chard Smoothie recipe with My Yummy Local Life and it made me want to make one for myself.  Sounds like a great way to jump-start the morning :)

What’s in the Box? #62


Today is a very special day because it is my precious little love’s 2nd birthday.  And boy did we have fun!  I know I say it often, but time really does fly.  It feels like yesterday that we were celebrating her 1st birthday.  While I was working on her monthly post last night, I was in awe of how much she has grown.  It is such a joy to watch her become her own little person.  She is pretty darn cute :)  Here she is blowing out her candles on her hot pink ice cream cake…(ps: she only wanted to eat the “sparkles”…aka sprinkles).

So now that Harper has us all in the mood to party, let’s celebrate our fruits and veggies :)

Last week we only had a total of 6 link ups but these ladies clearly came to party!!!  I mean Roasted Beet, Caramelized Onion and Goat Cheese Pizza, Pineapple Kale Juice, and Split Pea Soup?  I wish I could reach through the computer screen and sample a taste of each.  They all look and sound spectacular :)  Thanks for sharing ladies.  I am officially craving each of these dishes for my next three meals.

Speaking of meals, what the heck am I going to be doing with all this loveliness this week?

In Her Chucks- What's in the Box? #62

Well, let’s start with the chard.  I have been hoping and praying for some chard.  I recently came along another chard soup recipe, and after the success of my last soup experiment, I am feeling confident about trying something new and of course, looking forward to sharing with you :) (ps: speaking of soup, look for the Tomato Basil Bisque recipe soon…I’m shooting for the weekend).  And we all know soup goes perfectly with salad, so that head of lettuce will be delicious topped with some sliced avocado and homemade dressing.

I am thrilled about the strawberries again!  And I love the pairing of strawberries with kiwi.  Kind of brings me back to my first taste of Snapple when I was in elementary school.  Our student government put in a vending machine, but we weren’t allowed to have sodas so it would dispense Snapples instead.  Kiwi Strawberry was my favorite flavor.  Now I take a sip of it and almost keel over from diabetes.  Too sweet.  But I can’t get enough of the real thing.  Yummy, fresh and organic fruit simply makes me happy :)

Another fruit I am excited about are the mandarins.  I just can’t decide if I am going to eat them or juice them.  Guess it depends on if they make through the weekend or not.

So after all the delicious fish recipes I made during the Fresh Start Challenge, I am on a mission to cook fish more often.  Here is an amazing recipe I plan on making to help me use up that cilantro.  Served on a bed of my favorite potatoes with a side of broccoli and that is one scrumptious meal!

And finally some lovely leeks.  It’s been a while since I have whipped up this quiche so I think I will have to revisit the recipe.  I love that it can be served for breakfast, lunch or dinner, making it easy to meal plan for the week :)

What’s in the Box? Recipe Roundup #5


I’ve never missed my box more than I do at this very moment.  Even though me and the fam are enjoying a fun-filled week at Disney World, local, organic and fresh produce isn’t something you see a lot of around these parts.  I do my best to order the most veggie friendly thing on the menu but despite my efforts, I feel like all I am eating is a boat load of pesticides.  I’ll be the first to admit that I am a total produce snob, but these bags of baby carrots and sour grapes aren’t cutting it for me.  I am counting down the days until I can enjoy a nutrient rich home cooked meal (T minus 2).  But in the meantime, you can find me in the food court with my face planted into a Mickey Mouse Pizza (hangs head in shame…).

So since I can’t have my veggies or eat them too…let’s take a look back at last week’s party.

With total of 6 inspiring link ups it was the leafy greens who were partying it up the most.  Spinach, kale and chard were being dressed up and pampered in sinfully creamy and cheesy pasta and fancy dancy Quiche recipes.  Who knew eating your veggies could be so ooey, gooey and delicious :)  Thanks ladies for sharing your yummy dishes with the rest of us.

Sweet Potato Turkey Shepherds Pie: As much as I was looking forward to devouring a batch of Meghan’s Parmesan Roasted Sweet Potatoes I changed my plans when I remembered that I was hosting my cooking club for our monthly meeting.  I needed a dish that was simple, delicious and served a crowd and this recipe fit the bill (so did the size of this sweet potato).  This healthy take on a classic comfort food was a huge hit!  I plan on making this over, and over, and over again :)

Classic Baked Acorn Squash:  After using up the majority of my chard and carrots on soup, it was time to get busy with the squash.  Baking and roasting veggies is so darn easy and the results are so darn delicious.  Add some brown sugar, butter and maple syrup and you have yourself a party :)  I served this dish alongside some steak and steamed broccoli.  It proved to be the perfect way to round out the meal.

Chicken and Sun-Dried-Tomato Meatballs:  It seems silly to revolve your recipe search around a bunch of parsley but that is exactly what I did.  And even though it was just used as a garnish, it was a good excuse to execute another delicious meatball recipe.  The end result was a bit too spicy for me so I plan on cutting back on the jalapeño next time around but other than that, I highly recommend giving these bad boys a try.

What’s in the Box? #53

Hello, Friends :)  It has been too long.  I have been meaning to write but I was a bit preoccupied by these beautiful views…

Needless to say, our Thanksgiving in Texas was wonderful.  And being outside, exploring my sister’s horse ranch with Harper as my guide, was magical.  So much to be grateful for.

And while I was out in the wilderness, there was a raging party going on.  Last week we had a small but mighty 4 link ups!  With the holiday many folks didn’t receive a box so our party was much smaller than usual.  However, the recipes and goodies that were shared were more than enough to go around.  Sharlea from Fresh Veggies in the Desert whipped up an amazing Onion, Bacon, Butternut Tart with Cranberry Salsa with her CSA goodies.  And Megan from Clean Eats, Fast Feets, made some beautiful Moroccan Stuffed Acorn Squash.  Kirsten from Farm Fresh Feasts shared come budget friendly tips on how to reduce, reuse and recycle your food.  And finally Annie of AnnieRie Unplugged shared her ever bountiful Thanksgiving haul.  Thanks Ladies for your participation and for keeping the party alive.  I appreciate your loyalty and support :)

After one week without a box, you can imagine how happy I was to receive this week’s delivery.  I couldn’t wait to crack it open to see what goodies were hidden inside…

This week it’s all about the squash!  Butternut, delicata…all I can think about is cutting them up, tossing them with nutmeg, cinnamon, olive oil and a dash of salt and roasting them until they are deliciously tender.  A true autumn treat.

Another roasted favorite are carrots.  While I was away, I popped some carrots in the oven for dinner one night and they were a huge hit.  So simple, but so darn good!

I am giddy about those apples.  For one, it reminds me that I need to share my that apple crisp recipe (I haven’t forgotten…).  And secondly, Fuji apples are my favorite.  In fact, as I write this post I am snacking on one with a few slices of Gruyère cheese. A perfect pairing.  And when I am done with this I plan to peel one of those juicy mandarins.  A satisfying late night snack.

I love shallots.  They have such a mild flavor but they can easily transform a dish.  I used a bunch of shallots to make my Thanksgiving green beans.  Slice them thinly, saute them with lots of butter, season slightly.  Once they begin to soften, throw in the raw green beans, add some chicken broth to the pan (just enough to soak the veggies) cover the pan and steam for 5-10 minutes until green beans are tender.  Works every time!  In fact, I use this technique with a lot of my veggies.  I will probably saute my swiss chard with the shallots this week.  Might even throw in some of that garlic for an extra kick.

It’s been a while since I got some kiwi.  I usually slice it up and add it to smoothies or throw it into a fruit salad but I would really like to cook or bake with it this time.  Stay tuned to see what I come up with :)

I’m excited to get my fiesta on.  That bunch of cilantro is super fresh and fragrant.  I am thinking about making a batch of Green Rice to go along with a new taco recipe I have been dying to share with you.  Hopefully with my busy schedule, I can get my act together and get some food pics taken (if I can catch the daylight…)

And for the little head of lettuce.  A salad of course.  I might even jazz it up with some apple chunks and grated carrots if I am feeling wild one evening.

What’s in the Box? #47

With all of the excitement that has been going on lately, I keep forgetting to mention an important milestone for In Her Chucks and the What’s in the Box link party.  So rather than share childhood memories or funny stories, I am going to cut right to the chase.  A few months back, a loyal reader and awesome blogger, Christa of Christa to the Max, created a What’s in the Box? button for me.  I had been trying to create one on my own for quite a while but was frustrated by my lack of knowledge of html coding.  So, thank you Christa for coming to my rescue and helping to make What’s in the Box? more official :)  For those of you who are interested in grabbing the What’s in the Box? button, scroll down to the bottom of the homepage and pick it up.  And thanks in advance for promoting this fun and exciting party!

Now on to the fruits and veggies.  Last week we had 33 link ups!  And with Halloween right around the corner, it’s clearly all about the pumpkin.  Starting with how to cook a pumpkin, then how to turn your pumpkin into pancakes or doughnuts, and finally, what to do with those seeds.  Makes me want to go on the pumpkin diet.  Yum!  Thanks to everyone else who linked up.  Looks like everyone is eating well these days :)

Let’s take a look at what I will be eating this week…

Hello, chard!  It’s been a while since you have graced by box, and strangely enough, a veggie I once despised, is welcomed back with open arms.  And I got two huge bunches too!  I want to try something new with these this week.  During one of our first link parties, someone shared a recipe for a swiss chard smoothie and I have been intrigued ever since.  I am finally going to take the plunge and give it a try.  Can’t wait :)

I got pretty giddy to see those gorgeous cherry tomatoes because I owe you a killer recipe and this time I am not making excuses.  It’s going up on the blog tomorrow.  I promise!

I enjoyed one of those apples with a few slices of cheddar cheese for an after dinner snack which is keeping me satisfied as I sit here and tap away at my computer.  Not quite sure what kind they are but they are sweet and crisp and oh so delicious.  The grapes are going to make for a great snack as well.  Only wished I had gotten them sooner because my mom was asking for some the other night for a salad she had in mind.  Maybe I can get the recipe and pass it on.  It would be nice to jazz up that lovely head of lettuce and turn it into something special.

Speaking of special, whenever I get fresh avocados in my box I feel special.  And if I want to make my husband feel special, I whip him up a fresh batch of my famous guacamole.  Quite honestly it has been a while since we have enjoyed a mini-fiesta around here.  Which means some fajitas with that GIGANTIC onion and a few of the leftover peppers from last week might even be in order.  And of course, no fiesta would be complete without margaritas…in cupcake form :)

After reading this post, I will most definitely be roasting my carrots and beets this week.  I love how roasting brings out the sweetness in the veggies and the texture is just perfect.  Makes a great side dish to any meal.

And finally, the oranges.  I am thinking about making some fresh squeezed orange juice.  Which might even take place in the morning.  I am planning on enjoying some sweet potato pancakes with a side of bacon.  And fresh squeezed orange juice sounds like the perfect beverage to compliment that meal.

What’s in the Box? #26

As much as I love spring for all the beautiful, bountiful produce that is available, it’s hard to ignore the effect this season has on my allergies.  For some reason, this past week has been pretty brutal.  Runny nose, watery eyes, sneezing…constantly.  It’s been a bit unpleasant to say the least.  But when Wednesday comes along, and I open my box to find another round of fresh, local, and organic goodness, it tends to make up for all the temporary discomfort.

You know what else helps to take my mind off these stinkin’ allergies?  Our weekly link party!  And it continues to grow every week :)  Last week we had 23 link ups!  Make sure you check them out.  They are flooded with delicious recipes, killer cocktails and smart storage tips.  Thank you to everyone who has participated.  You are true produce rock stars!

Looks like it’s my turn…

Yes!  Cherries!!!  Do you know how happy this bag of cherries made me?  How about happy enough to devour each and every one…immediately :)  Cherries are in my top favorite fruits and I wait patiently every year for my first delivery of cherries.  Glorious!

Can you believe I am also pretty psyched about that chard?  Thanks to the link party, I have an arsenal of delicious recipes that all include chard.  The hardest part is going to be deciding which one to try first…eeny, meeny, miny, moe!  (Am I the only one who uses this method to help make decisions?)

One thing I don’t have to think about this week is my lettuce.  There have been some pretty awesome salads linking up that are inspiring me to try new things.  One idea I love is to throw in some roasted veggies.  Those carrots will be the perfect addition.  And I am sure the avocados will make an appearance as well.  Maybe not in the same salad…but in one of my many versions of a salad.

Freddie is most excited about the chives.  Like I continue to mention week after week, that boy has lots of love for the entire onion family!  He enjoys them most when I mix them in with his morning eggs.  And do you know what else will go great with those morning eggs?  Some fresh squeezed citrus juice.  I have been mixing it up in the kitchen lately and have gone a little hog-wild with the juicing.  Last week I hand juiced all of the oranges and pixie tangerines.  I even added some grapefruit juice.  It made for a refreshing beverage.  So I am looking forward to a new rendition this week of pixie tangerines with a splash of lemon…yum!

For the cauliflower, it has been a while since I made a batch of Cheesy Cauliflower Pancakes.  Talk about delicious!  I love to serve mine alongside a juicy steak.  They are a great substitute for potatoes.  And I might just have to experiment by adding some diced leeks.  Until I began my CSA subscription, I had never cooked with leeks, but now I like to throw them into everything.  The flavor is so mild but I find it can make a nice, sweet, difference.
