What I Ate Wednesday #14

This time last year, I had yet to indulge in a pumpkin treat.  Shameful, I know.  So this year, I made my best effort to stuff my face with all things pumpkin during the holiday season.  I don’t think a day has gone by that I haven’t started my day with Pumpkin Oatmeal, treated myself to a few Pumpkin Bars, or scarfed down a bowl of Turkey Pumpkin Chili.  And just when you thought I couldn’t possibly eat any more pumpkin, with only a week left until Thanksgiving, I decided to up the ante and incorporate it into my day as much as possible.  Because after next Thursday, it’s all about peppermint, gingerbread and egg nog :)

Breakfast:

Pumpkin Pancakes (recipe coming soon)

Side of Kielbasa

I have always taken pride in my homemade pancakes.  But these pumpkin pancakes kind of blow them out of the water.  I’m just saying…they are pretty darn scrumptious!  And nothing completes a pancake breakfast like a side of burnt-to-the-crisp kielbasa.  The blacker the better.  I like it scorched.  Can’t wait to share the recipe with you :) (the pumpkin pancake recipe that is…)

Snack #1:

Pineapple Chobani Yogurt topped with Fresh Raspberries

A handful of Roasted Coconut Chips

Believe it or not, I am still trying to work my way through my huge Chobani shipment.  So today I enjoyed my favorite combination of all…Pineapple Chobani Yogurt topped with fresh raspberries.  It’s so sweet and refreshing it kind of takes me away to a deserted island.  Magical.  And then I had to take it to the next level with a handful of my latest addiction: Trader Joe’s Roasted Coconut Chips.  Can’t go a day without them.  You MUST try them.

Lunch:

Chicken Cornbread Salad

After a fun and festive music class, Harper and I were ready for a healthy and hearty lunch.  This salad is one of our favorites.  With add ins such as grilled chicken, dried cranberries, walnut pieces and crumbled cornbread, it’s pretty much an autumn explosion on a bed of mixed greens.  If only my homemade salads where this fancy.

After Lunch Treat:

Slice of Pumpkin Spice Rice Krispie Treats

Ever since I received my Pumpkin Spice Marshmallows from my Foodie Pen Pal, I have been wanting to whip up a batch of Rice Krispies Treats.  Sadly, Halloween has come and gone and my poor Pumpkin Spice Marshmallows were still sitting on the counter.  Even though Thanksgiving is around the corner I couldn’t let me my fun idea for Jack-O-Lantern Krispies Treats go to waste.  Besides, now I have a killer idea mastered for next year’s festivities!

Snack #2:

Bolthouse Farms Mango Protein Smoothie

Since Harper has swim class on Tuesdays, dinner is always later than usual.  I was looking forward to a filling meal, but my tummy couldn’t wait.  Luckily, I found this sitting in the fridge and it was the perfect snack to take the edge off of my hunger until dinner was served.

Dinner:

Pumpkin Pie Spiced Pork Chops with Butternut Squash

Sautéed Swiss Chard

Comfort food has never tasted so good.  Butternut squash is one of my favorite autumn veggies and it pairs perfectly with pork.  I normally serve this meal with a side of broccoli but grabbed a bunch of chard from the crisper instead.  I love to sauté chard with some olive oil, onions and a few splashes of stock (chicken in this case).  It’s so quick and easy and the result is mouth-watering.

So just in case you were keeping count, I managed to squeeze pumpkin into 3 of my meals today.  Which in my opinion should win some sort of pumpkin rockstar award.  Granted it was more of a “pumpkin essence”, but the bottom line is, I am a pumpkin machine.  And tomorrow I am shooting for 4 pumpkin filled meals :)

November Photo A Day Challenge: Day 1-10

Let’s call it what it is…I am an Instagram junkie.  I love to capture life’s most precious moments through the lens of my iPhone and share them with my friends and family.  Plus, the different filters and special effects can transform an ordinary picture into an extraordinary one :)  In a nutshell, it makes photography fun and accessible to everyone!

And because I can’t get enough of my new favorite app, I decided to participate in another monthly photo challenge.  This month it is hosted by Chantelle of the blog Fat Mum Slim.  To be honest, I wasn’t aware of Chantelle, her awesome blog, or her history of photo challenges until one of my friends tagged her photo on Instagram with #fmsphotoaday.  So I became curious, googled it and decided I needed to be a part of it.

So without further ado, here is the first 10 days of my November as seen through my Instragram lens…

Day 1: something beginning with ‘C’-  I recently won a Chobani giveaway from Katy of Savor Life’s Flavors and the day that I received my package in the mail, my life was complete.  I have a true addiction to this stuff and having 12 different flavors to choose from truly made me feel like I had died and went to heaven.  I promise you I never win things but after my beginners luck I plan to enter giveaway’s more often ;)

Day 2: color-  Since I found out about this challenge after it had already started, there were a few prompts from the beginning of the month that I needed to catch up on.  So today, during a visit to our local children’s store for some “arfs & cracks” (what I used to call arts and crafts when I was little…and it stuck) I was inspired by the prompt to capture these awesomely colorful feathers.  The vibrant hues and fluffy texture make for the perfect “colorful” photo.   

Day 3: breakfast-  I am all about multi-tasking and killing two birds with one stone (sorry birds…I really am a lover).  Since I already photograph my eats for WIAW, I was able to double up on this prompt and use the same pic for Day 3.  So if you think you have seen this picture before you are right.  And if it is making you crave another hootenanny, I don’t blame you.  It’s a delicious way to start the day :)

Day 4: TV-  With as busy as I am nowadays, it’s rare that I get a chance to plop myself in front of the TV and enjoy a trashy reality show.  So I decided to take a pic of the incredible television display at Target during a late night shopping trip instead (which by the way is my all time favorite store…I get sucked in every time!).

Day 5: 5 o’clock-  The hardest things about daylight savings is saying good-bye to the long summer days.  For some reason, when it gets dark, I feel the need to get home and get cozy.  But catching a beautiful sunset on the way home might just make these early evenings acceptable.  PS: It seemed extra pretty this evening since I was coming home from a much needed massage…rough life, I know.

Day 6: a favorite thing-  Without a doubt, my two favorite things in this world are my husband and my daughter.  I did my best to snap a picture of the in the pool together, but they were too busy swimming…go figure.  So I snagged this photo from a friend who recently took some family portraits for us.  I love the joy on Harper’s face.  It makes my heart melt.

Day 7: reflection-  One of the things I love most about living in California is our history of the missions.  They are located up and down the Californian coast and offer beautiful views and incredible stories about how our state came to be.  I am lucky enough to live near a few and enjoyed playing around with the reflection of the mission on the pond.

Day 8: something you do everyday-  Family cuddles is an important tradition in our household.  Nothing feels better than waking up to a cozy toddler snuggle.  I know one day, Harper will be ready for her big girl bed, but in the meantime, I am grateful to be greeted by this glowing smiley face every morning.

Day 9: small-  Chucks are a big deal around here.  So as soon as I found out we were having a girl, Freddie and I went out and bought Harper her first pair of pink Chucks.  It took her a while to grow into them and before we knew it, they were too small.  It’s hard to believe she could ever fit into a size 1, considering she is now wearing a size 6.  But regardless of her shoe size, you can bet she will always be “In Her Chucks” ;)

Day 10: can’t {won’t} live without-  I think it is pretty obvious how much I love my family.  And honestly, I couldn’t imagine my life without them.  I am so incredibly grateful for their love and support.  They bring me so much joy and fulfillment.  I can’t {won’t} live without them.

What I Ate Wednesday #13

Every four years, we as American citizens have a responsibility to exercise our right to vote for the president of the United States (in addition to other things…).  Today, Harper and I took a stroll down to the polls to make our voice heard (in our Chucks of course…)

I hope you were all able to take some time out of your day to collect a cool sticker and make a difference in our country’s history.  It’s fun to rock the vote!

And after all that hard work, there was lots of yummy food to be eaten.  So let’s take a look at the food that fueled my tummy on this special election day.

Breakfast:

Hootenanny

Side of Bacon

It’s been a while since I have enjoyed this delicious and ridiculously easy to make breakfast.  I love that with only a few ingredients and 25 minutes (all of which take place in the oven), you have a protein packed meal that can go sweet or savory.  I drizzle mine with pure maple syrup and serve it with a side of bacon (which I also cook in the oven).  It’s a a pretty great way to start the day :)

Snack #1:

1 Pear

Handful of Raw Almonds

I love nothing more than biting into a juicy pear.  And while I am not normally a fan of the skin, this skin wasn’t too bad.  After having Gestational Diabetes, I learned to pair my carbs with fat and protein, so I grabbed a handful of nuts to accompany my sweet mid morning delight.  A lovely autumn combo :)

Lunch:

Tropical Iced Tea

Fettuccine Bolognese

Gorgonzola Walnut Salad

In order to celebrate Harper’s first time voting, we decided to pick up food from our favorite local cafe.  Harper loves “sketti” and I love salad and iced tea. So needless to say it was the perfect ladies lunch.  I make a mean homemade bolognese myself, but when I don’t have time to sit over the stove and cook, this hits the spot.

Snack #2:

Chobani Strawberry Banana Greek Yogurt

After winning a box of Chobani yogurt from Savor Life’s Flavors Giveaway, I have a fridge full of Chobani goodness, and more than a few flavors to choose from.  Strawberry Banana is one of my favorites and it serves as a great snack to get me through until dinner time.

Dinner:

Turkey Pumpkin Chili

Cornbread Muffin

I wish I could take credit for this AMAZING meal, but I can’t.  My lovely friend and neighbor whipped up this seasonal dish for our family and boy was it special!  I will be getting the recipe and sharing it with you shortly.  But until then, you can drool over the pictures and imagine how gooooood it is :)

In fact, this dinner was sooooooo good, it has me wishing Thanksgiving was right around the corner.  Instead, I have to wait a little over 2 weeks to enjoy my favorite holiday of the year (it’s true, I have an official countdown).

Clean Eating: Round 2/Day 9 & WIAW

Time for a quick poll.  When you have a recipe that calls for an obscure ingredient, how far are you willing to go to get it?  How many stores are you willing to visit?  Or would you rather just find a suitable substitute?  I ask because my lunch today took a bit of work.  Not to cook, but I had to go to a few different stores until I found what I needed (which ended up being an Asian market).  There are times when I am willing to substitute ingredients, but if it is my first time making it, I want to try it the way it was intended.  But then again, that’s the good ole’ OCD in me :)  (By the way, if you are wondering what I was so adamant about finding, it was Thai basil and rice vermicelli noodles.  ps: Totally worth the trip!)

Now back to the important stuff.  The food.  Today was filled with delicious eats.  Not a bad meal in the bunch.  And as far as summer staples are concerned?  Let’s just say I sailed away to a tropical island.  Pineapple, berries, fish.  Sounds pretty summery to me!

Breakfast:Egg & Pepper Sandwich:  1/4 cup each Vidalia onion, red bell pepper, and yellow bell pepper and 3 egg whites sautéed in 1 tsp olive oil  on top of 1 whole wheat English muffin.

Snack #1:1/2 cup each Greek yogurt and cottage cheese and chopped pineapple topped with 2 tbsp chopped pecans.

Lunch:Thai Pasta:  4 oz tofu (cubed), 1/2 carrot (peeled and shredded), 1/2 zucchini (shredded) sautéed with 1 tbsp peanut butter and 1 tsp soy sauce tossed with 2 cups vermicelli noodles and 2 leaves Thai basil (chopped)

Snack #2:2 oz Swiss cheese

1 1/2 cups mixed sliced strawberries and blueberries tossed with 1 tsp balsamic vinegar

Dinner:4 oz cod, seasoned with 1/4 tsp Italian seasoning and baked

2 cups chopped green beans sautéed with Vidalia onion and 1 tsp olive oil

1 cup cooked brown rice

Highlights:  Again, everything was pretty darn delicious, but the highlight was definitely the pineapple/yogurt concoction.  It was magical and reminded me of our honeymoon (in Turks and Caicos!)  I am a big fan of Chobani’s Pineapple Greek Yogurt and this was a great way to make your own.  The nuts gave it that extra crunch.  Nummy, num!

Lowlights:  No lowlights for me.  Simply scrumptious :)

As we say goodbye to the final days of summer, I am looking forward to all the goodness fall has to offer (including my 30 birthday!).  I will miss the long summer days and awesome selection of produce but can’t wait to start indulging in some of my favorite cold weather treats (apples and pumpkin galore!).
