What's in the Box?

I think it’s safe to say, we are officially “OC” residents.  We have a library card (and have visited 3 times already!), spent an entire morning in line at the DMV in an attempt to get a new driver’s license (lost mine during our travels this summer) and Harper is enrolled in preschool.  Phew…it’s been quite a week, but everything is starting to fall into place.

And all the while, we have been enjoying our delicious and nutritious treats from our new CSA.  I have also been enjoying perusing over your CSA eats from last week.  We had 10 link ups and apparently it was all about the green.  Green beans, pesto, and green tomato bacon jam.  The perfect veggie color :)

As for me, this is what I will be working with this week…

What's in the Box? #80And before we go any further, I have to mention the 3 garlic cloves that I forgot to place in the box before the picture.  Didn’t realize it until all the produce was put away…darn.

I am most excited about the figs!  I have never received figs in my box before, nor have I ever even tried one.  Not sure why, I have just never come across them before.  Looking forward to whipping up a savory dish with them that the whole family will enjoy.  Which means the garlic will come in handy for that recipe as well.  And Freddie and Harper can’t wait for a side of my famous mashed potatoes.

Next, 3 cheers for Thai basil!  It has been a while since I have gotten some in my box and I am looking forward to cooking with it.  It has such a lovely aroma and the flavor bursts in your mouth.

The taco salad last week was a big hit so I plan on duplicating that again.  I will chop up some of the tomatoes to throw on top in addition to some of those sweet peppers.

I am happy to see another bundle of grapes.  Our last batch went pretty quickly so I am hoping to experiment some more with recipes this week.

For the carrots, I have a great chicken recipe that calls for roasted carrots.  It’s a recipe I have been dying to share with you, so hopefully this will stand as a reminder for me to post it ASAP.

Speaking of roasting…love me some roasted cauliflower.  I roasted some last week for Harper to throw in with her broccoli and she LOVED it!

My apologies for the tardiness of this post but Harper and I have been busy this week soaking up all that Santa Barbara has to offer before we head home.  We are blessed to be able to visit such a beautiful place, but the best part of Santa Barbara is our wonderful friends.  Here is a peek at what we have been up to this week:

We are definitely going to miss this place, but are looking forward to being back home with Daddy :)

Now, without further ado, lets get “produce wasted!” (my own little spin on a popular movie line…name it!)

Our party last week was rockin! 19 link ups?!  The most we have had in a while.  Makes a veggie-obsessed, mommy blogger like me very happy :)  And you know what else makes me very happy?  Zucchini.  Especially when it’s hidden inside a chocolate waffle (Thanks Kirsten for taking my love of zucchini to the next level) or shredded into a savory loaf of bread.  It truly is the essence of summer.

And like the groundhog in February, a zucchini in my box this week means that summer will be around for at least a few more weeks (Full Disclosure:  I’m no meteorologist, it’s only a theory.  Just go with it.)

A rainbow of delicious colors.  And I’m loving nature’s candy again.  A bunch of red, crunchy grapes.  They make my world go round.  And no, I didn’t share.

But I was willing to share some of my other goodies.  I sliced up the apples for a picnic at the park.  Steamed the broccoli for my little veggie lover as a side to her lunch (she practically ate the whole head herself).  And the basil along with a few leaves of kale got thrown into the food processor for a batch of pesto.  Delish!

The oranges have inspired me to make a batch of muffins which will help to balance out the bowls of salad I will be eating thanks to the size of that head of lettuce.

I like my spaghetti squash simply roasted and tossed with some butter and parmesan cheese.  Although the fresh tomatoes would be a great addition to the squash in the form of homemade sauce.  In fact, I’m hungry just thinking about it.

What’s in the Box? #77

What's in the Box?

We are coming up on our last week in Santa Barbara.  And although Harper and I have enjoyed hanging with our friends and soaking in the beautiful summer weather, we are looking forward to going home and having our family back together.  But before we head out, I have made sure that we experience our favorite CSA a few more times.  The quality and variety of their produce helps to ease the pain of being homesick (I guess it’s no longer a secret what my drug of choice is…).  As does a rockin’ produce party :)

Last week we had a total of 12 links which yielded a whole lots of produce…especially tomatoes :)  I was most intrigued by Kirsten’s Kale Hummus this week.  I have been really into kale pesto this summer but kale hummus…mind blown!  I can’t get enough of the beauty that is Salted Plates Peach Caprese Salad.  Simply gorgeous.  And finally, I’m excited to try Eats Writes Shoots Vegetarian Tacos with Grilled Zucchini.  Yum!  Thanks to everyone for linking up.  I truly can’t get enough of your ingenious ways to eat your veggies.

And now on to how I plan to eat my veggies…

What's in the Box? #77

It’s boxes like this that make me miss my old CSA :(  I mean, there is so much delicious and summery goodness, it’s hard to know where to start.  But since this item is new to me this week, I have to highlight it first…

Mouse Watermelon Cucumbers

Have you ever seen something so adorable?!  They are mouse watermelon cucumbers and they are my new favorite treat!  Kind of a cross between a grape and a cucumber, that looks like a watermelon but is slightly slimy and sour in the middle.  But they keep me coming back for more :)  I have been popping these suckers in my mouth ever since I opened up my box.  They are crunchy and delicious and as soon as we start up another garden, these little gems will be front and center.  Love!

And then there are those red flame grapes.  Or as I like to refer to them, “nature’s candy”.  These grapes are so sweet and crunchy, they have been serving as my post meal treat.

I am also loving the assortment of pluots this week.  During the days of pluot abundance, I would have made my famous crumble. But these days, it has been a while since I have had the chance to sink my teeth in to one of these.  Now, I am savoring each and every bite :)  The Flavor Gold ones are by far my favorite!

I am excited about the melon.  I am assuming it is a cantaloupe but haven’t cut it open yet.  It is still a bit green so I am going to try to let it ripen up a bit.  But I am looking forward to scooping out the seeds and filling it with cottage cheese or plain yogurt.  A healthy and hearty mid day snack.

Speaking of snacks, Harper and I have been snacking on those monstrous carrots the last few days.  If there are any left I have the perfect dinner dish to make with them and am looking forward to sharing it with you.

I have been craving big, protein filled breakfasts lately and adding fresh spinach and tomatoes to a morning scramble is a great way to kick off the day.  Or, they might make into a quiche, in which case, a salad on the side would help to create the perfect lunch or dinner.

What’s in the Box? #47

With all of the excitement that has been going on lately, I keep forgetting to mention an important milestone for In Her Chucks and the What’s in the Box link party.  So rather than share childhood memories or funny stories, I am going to cut right to the chase.  A few months back, a loyal reader and awesome blogger, Christa of Christa to the Max, created a What’s in the Box? button for me.  I had been trying to create one on my own for quite a while but was frustrated by my lack of knowledge of html coding.  So, thank you Christa for coming to my rescue and helping to make What’s in the Box? more official :)  For those of you who are interested in grabbing the What’s in the Box? button, scroll down to the bottom of the homepage and pick it up.  And thanks in advance for promoting this fun and exciting party!

Now on to the fruits and veggies.  Last week we had 33 link ups!  And with Halloween right around the corner, it’s clearly all about the pumpkin.  Starting with how to cook a pumpkin, then how to turn your pumpkin into pancakes or doughnuts, and finally, what to do with those seeds.  Makes me want to go on the pumpkin diet.  Yum!  Thanks to everyone else who linked up.  Looks like everyone is eating well these days :)

Let’s take a look at what I will be eating this week…

Hello, chard!  It’s been a while since you have graced by box, and strangely enough, a veggie I once despised, is welcomed back with open arms.  And I got two huge bunches too!  I want to try something new with these this week.  During one of our first link parties, someone shared a recipe for a swiss chard smoothie and I have been intrigued ever since.  I am finally going to take the plunge and give it a try.  Can’t wait :)

I got pretty giddy to see those gorgeous cherry tomatoes because I owe you a killer recipe and this time I am not making excuses.  It’s going up on the blog tomorrow.  I promise!

I enjoyed one of those apples with a few slices of cheddar cheese for an after dinner snack which is keeping me satisfied as I sit here and tap away at my computer.  Not quite sure what kind they are but they are sweet and crisp and oh so delicious.  The grapes are going to make for a great snack as well.  Only wished I had gotten them sooner because my mom was asking for some the other night for a salad she had in mind.  Maybe I can get the recipe and pass it on.  It would be nice to jazz up that lovely head of lettuce and turn it into something special.

Speaking of special, whenever I get fresh avocados in my box I feel special.  And if I want to make my husband feel special, I whip him up a fresh batch of my famous guacamole.  Quite honestly it has been a while since we have enjoyed a mini-fiesta around here.  Which means some fajitas with that GIGANTIC onion and a few of the leftover peppers from last week might even be in order.  And of course, no fiesta would be complete without margaritas…in cupcake form :)

After reading this post, I will most definitely be roasting my carrots and beets this week.  I love how roasting brings out the sweetness in the veggies and the texture is just perfect.  Makes a great side dish to any meal.

And finally, the oranges.  I am thinking about making some fresh squeezed orange juice.  Which might even take place in the morning.  I am planning on enjoying some sweet potato pancakes with a side of bacon.  And fresh squeezed orange juice sounds like the perfect beverage to compliment that meal.

What’s in the Box? #40

 

Break out the gag gifts, inflate a bunch of balloons and get the party favors ready, because What’s in the Box is Over the Hill!  That means I have drooled over, gushed about and enjoyed around 400 varieties of fruits and veggies during the last 9 months.  And each and every piece of produce has been divine!  The fun part about this milestone is, that like a good bottle of wine, as we move forward on this journey together, it is only going to get better :)  The more I receive fresh, local produce, the more I learn how to cook, enjoy and prepare it.  And now that I have you all partying with me…well, I have more ideas than I know what to do with!  So, WITB…40 is looking real good on you :)

Last week might have been a small turnout (compared to some of our recent parties) with 33 link ups, but each and every post was chock full of delicious CSA goodness.  And tomatoes stole the show!  Everything from Oven Roasted Tomatoes, Crepes a la Piperade, Vodka Sauce and Tomato Cobbler.  Truth be told, I wasn’t always a fan of tomatoes, but I’m definitely warming up to them.  And these recipes have me drooling over tomatoes now!  Thanks to everyone who participated in the link party last week.  I appreciate your continued support and creative ideas.

Now it’s time to check out the contents of my Over the Hill box…

Speaking of tomatoes…check out those yellow tomatoes.  I was stumped when I first saw them.  I have never encountered a tomato of that shape and the color made me think it was a pepper or other type of fruit.  So I had to take a bite out of one to make sure it was indeed a tomato.  Score!  I was on my way to the store to pick up some tomatoes for the rest of my meal plans this week and was happy to get some freshly picked ones instead.  Love when that happens :)

I was excited to see another bulb of elephant garlic again.  Although I still haven’t made my way through the last bulb.  Guess I will have to get on that or else I will have garlic coming out of my ears!

After a ton of pluots in my box this summer, I finally got my favorite variety…Flavor Granade Pluots.  I love the color and I love the flavor.  They make for such a yummy and refreshing snack, it’s hard to eat just one.  If I wanted to be naughty, I would make this tart.  Blows my crumble out of the water!

I am loving those little tiny grapes.  I almost didn’t think they were real.  They look like the plastic grapes you see used as decoration.  Harper and I grabbed a handful and gave them a try.  Crunchy and sweet!  I will have to look for this Red Flame variety in the future.

And while we are on the subject of grapes…these grapefruits look mighty nice!  There is nothing like a tart, juicy grapefruit to start your morning off right.  I find that it rounds out my meals with eggs quite nicely.  I will have to try my best to fit it into my meal plan this week.

As for the rest of the haul…The green beans and red bell peppers were cooked up tonight for lunches tomorrow.  Stay tuned for a clean eating post with details.  Expect to see the corn, carrots and Romaine lettuce in the next few days as well.  Lots of delicious and fresh meals on the horizon.
