What's in the Box?

After over 2 months of vacation, Harper and I are finally back to reality.  It feels nice to unpack our bags, hang up our clothes and put our toiletries back in the medicine cabinet.  But lots has happened since we first left for Ireland back in June.  While we were gone, Freddie got another new job.  Which means yet another move for us (which, if you’re still keeping track is 12 moves in 8 years…with 3 of those moves happening in the last 8 months).  As much as we had hoped they would, things just didn’t work out for us in San Louis Obispo.  But as they say, when one door closes, another one opens, and Freddie’s new opportunity is even better than his last.  So while Harper and I were visiting friends and family all over the globe, Freddie was busy packing up our new home up north and moving us south to good ol’ Orange County.

Luckily, I am no stranger to this area.  I have aunts, uncles and cousins who live in Orange County and so I guess you can say I have grown up coming to visit here.  It’s just so much bigger than what we have become accustomed to after living in Santa Barbara for the past 3 years.  But there is nothing better than being close to family, so we are very grateful for that.

And of course, I couldn’t approve of the move until I found a CSA.  And my new one sounds awesome!  I just didn’t submit my subscription in time to get a box this week, so next Tuesday I will be picking up a box and can’t wait to share it with you all.

But in the meantime, let’s check out the links from last week.  I am loving the rooty, tooty, fresh and fruity flavors that are coming our way…Pizza with Raspberries, Pasta with Peaches, and Quinoa with Cranberries (and pineapple mint!).  Get’s me more excited than it should.  But, as we all know, I have a weakness for fruit.  Which is why I have decided to share my favorite summer fruit recipes this week.

What I Ate Wednesday #13

Every four years, we as American citizens have a responsibility to exercise our right to vote for the president of the United States (in addition to other things…).  Today, Harper and I took a stroll down to the polls to make our voice heard (in our Chucks of course…)

I hope you were all able to take some time out of your day to collect a cool sticker and make a difference in our country’s history.  It’s fun to rock the vote!

And after all that hard work, there was lots of yummy food to be eaten.  So let’s take a look at the food that fueled my tummy on this special election day.

Breakfast:

Hootenanny

Side of Bacon

It’s been a while since I have enjoyed this delicious and ridiculously easy to make breakfast.  I love that with only a few ingredients and 25 minutes (all of which take place in the oven), you have a protein packed meal that can go sweet or savory.  I drizzle mine with pure maple syrup and serve it with a side of bacon (which I also cook in the oven).  It’s a a pretty great way to start the day :)

Snack #1:

1 Pear

Handful of Raw Almonds

I love nothing more than biting into a juicy pear.  And while I am not normally a fan of the skin, this skin wasn’t too bad.  After having Gestational Diabetes, I learned to pair my carbs with fat and protein, so I grabbed a handful of nuts to accompany my sweet mid morning delight.  A lovely autumn combo :)

Lunch:

Tropical Iced Tea

Gorgonzola Walnut Salad

In order to celebrate Harper’s first time voting, we decided to pick up food from our favorite local cafe.  Harper loves “sketti” and I love salad and iced tea. So needless to say it was the perfect ladies lunch.  I make a mean homemade bolognese myself, but when I don’t have time to sit over the stove and cook, this hits the spot.

Snack #2:

Chobani Strawberry Banana Greek Yogurt

After winning a box of Chobani yogurt from Savor Life’s Flavors Giveaway, I have a fridge full of Chobani goodness, and more than a few flavors to choose from.  Strawberry Banana is one of my favorites and it serves as a great snack to get me through until dinner time.

Dinner:

Turkey Pumpkin Chili

I wish I could take credit for this AMAZING meal, but I can’t.  My lovely friend and neighbor whipped up this seasonal dish for our family and boy was it special!  I will be getting the recipe and sharing it with you shortly.  But until then, you can drool over the pictures and imagine how gooooood it is :)

In fact, this dinner was sooooooo good, it has me wishing Thanksgiving was right around the corner.  Instead, I have to wait a little over 2 weeks to enjoy my favorite holiday of the year (it’s true, I have an official countdown).

What I Ate Wednesday #9

I just got home from an amazing birthday weekend.  I have to say, if this year is any reflection of all the good times we celebrated over the last few days, 30 is going to be pretty darn cool.  I am so grateful to my husband and the rest of the family for making this birthday one I will never forget.  Look forward to a blog post of our activities coming soon.  But for now, let’s focus on the food.

This month, Jenn from Peas and Crayons has us all excited about the yummy festive treats Halloween has to offer.  October seems like the perfect time to eat pumpkin for breakfast, lunch and dinner.  While I didn’t’ quite get the chance to fit it in to all of today’s meals, I was able to start my day off with a short stack of pumpkin pancakes smothered in butter and pure maple syrup.  Yum!

Breakfast:

Before heading home from our lovely mini-vacation, we made a stop at one of our favorite breakfast spots, Uncle Bill’s Pancake House.  I couldn’t help but start with a refreshing ice tea on such a warm morning.  My mom and I decided to split a short stack of pumpkin pancakes, a side of bacon and a veggie omelet (stuffed with spinach, onion, avocado and cheddar cheese).  Everything was delicious!  And the view wasn’t bad either…

After filling our bellies with quite the breakfast smorgasbord, we hit the road to run a few more errands.  Whenever we are in LA we have a list of things we must do.  One that tops the list is getting our nails done.  Freddie and I have been going to the same nail salon for years so whenever we are in town we like to indulge in a little pampering.  Before we knew it, a few hours had passed by and it was time for a snack.  We ran across the street to Starbucks to pick up some munchies and an iced beverage.

Snack #1:

While I was pregnant with Harper I got very familiar with this Cheese and Fruit Bistro Box.  It’s a great snack to pick up on the go and always satisfies.  Apparently Harper is still a fan because she pretty much ate all the cheese on her own.  I was able to snag a few bites of the brie to eat with the apples and chomped on a few nuts.  To wash it down, I decided to try a Very Berry Hibiscus Refresher, which I wasn’t too pleased with.  However, Freddie enjoyed it to the last drop.  Next time I’m sticking with my regular iced green tea.

After sitting on the freeway for over an hour in Sig Alert traffic, I was ready for some lunch.  We needed something that was convenient and easy so we settled on Baja Fresh.

Lunch: 

I just love these fish tacos.  The fish is light and flakey, the cabbage gives it just enough crunch to make it interesting and of course, what taco isn’t complete without a few slices of fresh avocado.  I paired it with a side salad and a few chips dipped in guacamole (not pictured).

I often find myself craving something sweet after such a flavorful lunch.  So during our car ride I cracked open a package of these chewy mango snacks to tide me over until dinner.

Snack #2:

They hit the spot and are by far the best dried mango I have ever had!  I am officially hooked.

We didn’t quite make it home in time for dinner so we did a quick sit down at Souplantation.

Dinner:

I love nothing more than a huge salad packed with everything but the kitchen sink.  I will throw pretty much anything in the mix as long as it qualifies as a fruit or vegetable.  The sweet potato was a great addition to the meal as well.  I actually ended up eating 3 more.  I just can’t get enough of baked sweet potatoes.

Road trips are always fun but finding a way to eat healthy on the go can be rough.  For the amount of running around we did today, I am pretty proud of most of my food choices.  The fact that we were able to steer clear of fast food drive-thrus is a huge success.  Thank God for smart phones and the ability to search for healthy and convenient restaurants in unfamiliar territory.

Now that we are home and settled and I am sitting at my computer typing up this post, I realized I needed one more yummy snack before I hit the hay.  So I grabbed some of Harper’s dried fruit and shoved a few handfuls in my mouth for good measure.

Late Night Snack:

If you haven’t tried these amazing toddler snacks, you are missing out.  This is a new flavor we picked up at Whole Foods this weekend but the Strawberry & Mango is fantastic too.  I am pretty much obsessed with these things.  And Harper likes them too (or at least that is what I am trying to convince my husband of so that I can continue to splurge on them at the grocery store…).
