What's in the Box?

Well hello there!  Did you miss me?  Did you think I fell off the face of the earth?  My apologies for leaving you all hanging last week but this moving thing has been kicking my butt!  So grateful to be settling in to our new home but it hasn’t been easy.  The biggest challenge we had to face was looking for a refrigerator.  Who knew it could be so difficult?  And living without one for a week…now, that was rough!  We had to eat out for every meal, which is something we are not used too.  My poor husband has never been happier to eat a home cooked meal.  I guess the saying is true, you don’t know what you got till it’s gone…

I have yet to find a CSA (although I haven’t been looking too hard since we were without a refrigerator).  But now that the kitchen is up and running it is only a matter of time before a produce box will be delivered to my doorstep.  In the meantime, I thought I would reflect on some of my past boxes and share some of the recipes that never made the blog.

But before we get to that, let’s check out some of the link ups from the last party.  I was most excited to drool over see Views From Here’s Roasted Brussel Sprouts with Cranberry Almond Pesto.  How awesome does that sound?  I am also loving all of The 100 Mile Kitchen’s homemade soups right now.  And finally, what’s a WITB link party without a Farm Fresh Feasts pizza?  It’s only been a week and you ladies already have me jonesing for my fruits and veggies again.  Thanks for linking up and sharing your CSA goodies with the rest of the party.

Kale Salad:  Ok, so I have been telling you guys about this salad for a while now and I have yet to post the recipe.  But a few weekends ago I made it again and it was so super duper stellar it is back on my radar.  So consider this an IOU.  I can’t wait to share the recipe with you.  And please, continue to bug me if I forget to post it soon.  It is the perfect summer BBQ dish :)

Grapefruit Ricotta Cookies:  Is this post still considered a recipe roundup if 2 out of the 5 recipes aren’t actually recipes at all?  My apologies again for being such a slacker but at least in this case I have a picture.  I just can’t share it with you yet because I need to write the post.  But it is top of the order on my list of things to do (blog related at least) and I am hoping to get it done this weekend.  Trust me, it’s worth the wait!

Pork Tenderloin with Strawberry Chardonnay Sauce:  So what do you do when you have strawberries coming out of your ears?  Well, you can make a Fresh Strawberry Yogurt Cake or you can whip up a delicious and nutritious dinner for your whole family (or in my case, you can do both!).  This amazing recipe came from the new Yummy Mummy Kitchen cookbook that my dear friend Sasha picked up for me.  It is loaded with creative and healthy ways to use your favorite farm fresh produce.  It’s the first thing I turn to for inspiration nowadays.

Chicken with Creamy Spinach and Shallots:  As much as I love to cook, I LOVE when my mom cooks for me.  And lucky for me when she was in town for my brother’s wedding she totally spoiled me with a ton of fresh and delicious home cooked meals.  But this one was by far my favorite.  Served with a side of rice pilaf this dish is affordable, easy to make and oh so scrumptious.  Can’t wait to recreate it again soon.

Pumpkin Mac and Cheese:  So I recently broke my own rules and indulged myself in a batch of homemade Pumpkin Mac and Cheese.  And I have absolutely no regrets.  The sage made me do it.  And between the aroma of fresh pumpkin and the intense food coma I was in afterwards, I could have sworn it was Thanksgiving all over again.  Note to self:  Make this for Thanksgiving from this year forward.  It is an amazing addition to a traditional feast.

What’s in the Box? #53

Hello, Friends :)  It has been too long.  I have been meaning to write but I was a bit preoccupied by these beautiful views…

Needless to say, our Thanksgiving in Texas was wonderful.  And being outside, exploring my sister’s horse ranch with Harper as my guide, was magical.  So much to be grateful for.

And while I was out in the wilderness, there was a raging party going on.  Last week we had a small but mighty 4 link ups!  With the holiday many folks didn’t receive a box so our party was much smaller than usual.  However, the recipes and goodies that were shared were more than enough to go around.  Sharlea from Fresh Veggies in the Desert whipped up an amazing Onion, Bacon, Butternut Tart with Cranberry Salsa with her CSA goodies.  And Megan from Clean Eats, Fast Feets, made some beautiful Moroccan Stuffed Acorn Squash.  Kirsten from Farm Fresh Feasts shared come budget friendly tips on how to reduce, reuse and recycle your food.  And finally Annie of AnnieRie Unplugged shared her ever bountiful Thanksgiving haul.  Thanks Ladies for your participation and for keeping the party alive.  I appreciate your loyalty and support :)

After one week without a box, you can imagine how happy I was to receive this week’s delivery.  I couldn’t wait to crack it open to see what goodies were hidden inside…

This week it’s all about the squash!  Butternut, delicata…all I can think about is cutting them up, tossing them with nutmeg, cinnamon, olive oil and a dash of salt and roasting them until they are deliciously tender.  A true autumn treat.

Another roasted favorite are carrots.  While I was away, I popped some carrots in the oven for dinner one night and they were a huge hit.  So simple, but so darn good!

I am giddy about those apples.  For one, it reminds me that I need to share my that apple crisp recipe (I haven’t forgotten…).  And secondly, Fuji apples are my favorite.  In fact, as I write this post I am snacking on one with a few slices of Gruyère cheese. A perfect pairing.  And when I am done with this I plan to peel one of those juicy mandarins.  A satisfying late night snack.

I love shallots.  They have such a mild flavor but they can easily transform a dish.  I used a bunch of shallots to make my Thanksgiving green beans.  Slice them thinly, saute them with lots of butter, season slightly.  Once they begin to soften, throw in the raw green beans, add some chicken broth to the pan (just enough to soak the veggies) cover the pan and steam for 5-10 minutes until green beans are tender.  Works every time!  In fact, I use this technique with a lot of my veggies.  I will probably saute my swiss chard with the shallots this week.  Might even throw in some of that garlic for an extra kick.

It’s been a while since I got some kiwi.  I usually slice it up and add it to smoothies or throw it into a fruit salad but I would really like to cook or bake with it this time.  Stay tuned to see what I come up with :)

I’m excited to get my fiesta on.  That bunch of cilantro is super fresh and fragrant.  I am thinking about making a batch of Green Rice to go along with a new taco recipe I have been dying to share with you.  Hopefully with my busy schedule, I can get my act together and get some food pics taken (if I can catch the daylight…)

And for the little head of lettuce.  A salad of course.  I might even jazz it up with some apple chunks and grated carrots if I am feeling wild one evening.

What’s in the Box? #18

Spring has sprung and boy am I excited!  As far as weather is concerned, there really is no big change.  I am lucky to live in a town that tends to be around 70 degrees year round.  So there really is no drastic change in that area.  But I love how the days get longer.  Sunlight is my friend and having it stick around well into the evening makes me feel like I can get so much more done.  So here’s to longer days and of course, spring produce…my second favorite thing.

I have been hearing a lot of talk about pixie tangerines lately.  To be honest I don’t know if I had ever tried one…until today, that is.  And let me tell you, sweet little gems.  Totally live up to the hype.  They are my new little go to snack :)  And speaking of snacks, those carrots are prefect snacking size.  Dip them in some roasted red pepper hummus and you got yourself a nice afternoon pick me up!

So where’s the fiesta?  Avocados always scream guacamole to me!  Which means I might be looking for some dinner guests to come help me devour a big batch of it.  Of course, the evening would include some amazing fish tacos, topped with shredded green cabbage (recipe to come!).  Any takers?

Since my little girl seems to be a huge fish eater lately (her new favorite food), these navel oranges will be perfect for my delicious halibut recipe.  And even though the recipe calls for scallions, these green spring onions will work just fine.  I might even have to serve a delicious salad on the side with my favorite red leaf lettuce.  Sounds like the perfect meal :)

Every time I get a batch of kale, I get a taste in my mouth for my Sausage White Bean Kale Soup.  There is something about it that screams comfort food to me.  And it’s so darn easy!  Second to fish, Harper always enjoys mama’s homemade soups.  Added bonus, the recipe calls for shallots.  So looks like the only thing I need to pick up at the store is some crunchy bread and fresh sausage.  Yum…I might just have to get busy on this dish tomorrow.

And finally, the peppery goodness that is arugula.  I think I might just have to make it a two taco night week.  I keep forgetting to share one of my favorite taco recipes with you and this arugula is the perfect excuse to get cookin.  So it looks like we will be celebrating Taco Tuesday all week long!

How is My Garden Growing?: The Next Chapter

The weather on Sunday was warm and sunny.  It was a perfect day to play in the garden.

Even the critters were getting into the action.

But there was a lot of work to be done.  It is time to plant a new batch of crops.  We were excited to harvest some of our winter crops and make room for the vegetables of spring and summer.

We started by digging up our lettuce so we could share them with our friends and neighbors.  We decided to plant rows of corn in it’s place.  We also added a few asparagus plants in the same section as well.  Two of our favorite vegetables!

In the back of our plot we planted a few potatoes, green beans, sweet peas and cucumbers.

We still haven’t seen a huge harvest from our initial strawberry planting, so we decided to add a few more plants to see if it would spark some action.

Finally, we added some shallots and chives to the mix as well.  We are still tending to our carrots, celery, onions, Brussels, and parsley which are all thriving.  We had to say goodbye to our broccoli plant as the weather has been a little too warm and as a result it decided to bloom flowers instead of a head.  Oh well, 8 out of 9 ain’t bad :).

We introduced some worms to our compost bin and are looking forward to the benefits of their hard work.

This experience continues to be enjoyable.  A LOT of hard work, but very fun.  Harper is having a blast too.  Her favorite part is hanging out in the wheel barrel.  She also digs a mean hole with that orange shovel.  Don’t let those little hands fool you.  She takes her job very seriously :)

And even after all of that, we are still not done.  Stay tuned for the next installment.  I see some more delicious veggies in our future :)

What’s in the Box? #9

Happy Wednesday!  This week sure is flying by.  And Harper and I have been busy busy (yes I meant to say busy twice…cause that’s how busy we have been).  In fact, we were so busy we almost didn’t make it home in time to take a picture of our box!  With minutes to spare, I was able to snap this before the sun went down… phew!

Is it just me or does this color scheme remind you of the 70s?  Kind of groovy, right?  I actually love how everything coordinates with those gorgeous kabocha squash.  They are going to make a delicious side for an asian inspired dinner.  In fact, one of the recipes calls for fresh orange zest, so the navel oranges will come in handy.

And look at all that green!  I love it :)  Let’s start with the watercress.  I have a killer soup recipe that I can’t wait to share.  Its simple, easy and delicious.  And it calls for potatoes, so those Yukon Golds have a home too.  I might have to get busy with the romaine lettuce and make it a soup n’ salad kind of meal.  Sounds like a yummy homemade lunch!

Next up, sugar snap peas.  I have recently enjoyed blanching them and then sautéing them with butter and lemon zest.  Amazing!  And the cabbage, well Freddie loves my chinese chicken salad.  It calls for shredded cabbage as opposed to lettuce and is a sure winner around here.  The mandarins will work perfectly as a topper too.  As long as I don’t make cabbage rolls again, Freddie will be happy.

Those shallots are plump!  As much as I love cooking with them (probably one of my all time favorite ingredients), they are deathly on the eyes.  I may be a wimp when it comes to slicing onions, but shallots are no joke!  I had to invest in a pair of onion goggles to protect myself.  Strong stuff!

Finally, what about the kiwis?  Freddie has been on a smoothie kick lately.  One of his favorite combinations is kiwi-strawberry, so its possible that he might snag these before I get a chance to.

Another week of yummy fresh fruits and veg.  Can’t wait to get cookin!

What’s in the Box? #3

Skittles got nothing on me.  When I opened up my box today, I was waiting for a little leprechaun to jump out with a pot of gold.  This is what it means to eat the rainbow.

But before we go on to talk about healthy things, let’s get back to those Skittles.  I mean, really, who eats every color?  I for one, go for the reds first, then a few purples, possibly a yellow or green, but never an orange.  When I was a kid, I would always “share” the rest of my Skittles with my brother (can you still call it sharing if you are simply giving someone your leftovers?).  Turns out I did him a favor, because now he always goes for the colors no one likes first, the purples, oranges, yellows, when the rest of the group always wants the red.  Therefore he always gets what he wants :)

Anyways, I digress.  Back to my fruits and veggies.  Is that not the most beautiful sight?  And to top it off, they gave me rainbow chard!  So we are definitely in a rainbow mood today.

So many delicious options, I don’t even know where to start!  But I have to say, I was excited to see my little mandarins again.  I have been fighting a nasty cold, and these tiny gems deliver me with a nice dose of Vitamin C.  Though, not as much as those vibrantly green pineapple guavas.  They are in the top 10 for having the most Vitamin C found in a plant source.  So looks like I am in good hands.  The jury is still out on the guavas as to whether I will eat them raw or find a yummy dish in which to incorporate them.  But regardless of how they end up, my tummy is sure to be happy.

There is nothing like the tartness of a granny smith apple.  My mouth begins to water when I look at one.  The taste is so distinctive. I have so many delicious savory dishes in which I could use these.  But chances are I will make another dessert for Freddie, as he has his eye on an apple cake he would like to try.  We’ll see how it turns out.  I will have to make sure I leave at least one apple leftover though.  It is one of my favorite ingredients to throw into a side salad.  And that green leaf lettuce is calling my name.

One look at those sweet potatoes and I was in heaven.  I have had a strong craving for some sweet potatoes lately.  It’s definitely the time of year.  Sweet potatoes are always one of my favorite sides at Thanksgiving Dinner.  But of course, I never limit their appearance to that meal only.  I like to eat sweet potatoes all year round!  And with the leftover butternut squash I have yet to use up, I have a feeling these two will be having a rendezvous in the near future.

I love it when I get different ingredients in my box that can be used for the same recipe.  These bell peppers and shallots will work perfectly in a yummy chicken recipe I have planned.  This one is sure to be a post in the coming week.  The chard will probably make an appearance in that meal too since it has been a while since I have sautéed some chard as a side dish.  The last few times I have gotten chard I have experimented with other ways to prepare it.  All of which were a success but it never hurts to go back to an old classic.

Tomatoes, tomatoes, tomatoes.  I can’t seem to shake them!  I just used the ones for the last two weeks in a delicious Bolognese recipe I found.  It’s rare to find tomato sauce recipes with fresh tomatoes.  Most of them call for canned.  So I was excited to see how it would turn out.  Plus, the recipe called for 2 lbs of tomatoes which is exactly how much I had.  Success!  I said last week I would make my homemade tomato sauce, and ended up trying something new.  Maybe I will go with my original plan but find a new way to use it, since we are little “pasta-ed” out at the moment.

Finally, turnips.  I can’t say I am very familiar with this vegetable.  But looking online, there seems to be a million ways to prepare them.  I am excited to see what will come of this experiment :)

Looks like I will have a colorful week ahead of me.  And who knows, the leprechaun might still show his face when I get to the end of the fruit and veggie rainbow!
