What’s in the Box? Recipe Roundup #8

What's in the Box?

Greetings from Ireland!  Harper and I just touched down this morning and are so grateful to be on the Emerald Isle.  After nearly 24 hours of traveling, we are officially exhausted!  Luckily, I have a rockstar of a toddler who was perfect every step of the way…

ireland trip

It’s going to be a pretty rockin party while we are here.  Harper and I have never been to visit since my mom moved to Ireland 7 years ago so she is pretty excited to be hosting us in her beautiful home.

Speaking of parties…we all know there ain’t no party like a produce party and this produce party don’t stop.  So let’s take a look at last week’s party.  For one there were 15 links…Woo Hoo!  And seriously, I need every single one in my belly immediately.  But I thought it would be fun to highlight some delicious summer dishes that are sure to take your family BBQs to a whole new level.  My favorite link this week comes from Meghan of Clean Eats, Fast Feets.  Are you a strawberry lover?  Than you are going to die over this berry filled post complete with Strawberry Pasta!  Next, what BBQ is complete without some kebobs?  Luckily Lauren from Gourmet Veggie Mama has got you covered.  And finally, I am sure we have all enjoyed a nice juicy grilled piece of steak before but have you ever tried bison?  Melissa from Lettuce Never Squash Our Love has me curious to add this lean meat to my next cookout menu.  Thanks to everyone who linked up!  You continue to make my week extra special with your delicious and nutritious meals :)

Now on to some of my favorite green dishes in honor of my Irish Leprechauns :)

For starters, with all the avocados I have been getting in my CSA this summer, guacamole is the perfect solution.  And my recipe just happens to be the best… The Ultimate Guacamole

The Ultimate Guacamole - In Her Chucks

Next, what’s more green than, well…Green Rice!

Green Rice - In Her Chucks

And of course, what in the world is a green foods recipe roundup without a beautiful green salad…one of my favs by far…Strawberry Salad

Strawberry Salad - In Her Chucks

Even though soup in the middle of summer sounds far from appetizing, this soup is magical, and totally worth a brow full of sweat.  Plus, it’s got amazing health benefits…Watercress Soup

Watercress Soup - In Her Chucks

And finally, a bunch of tasty meatballs, served on a bed of Boy Choy.  Sautéed greens at their finest…Turkey-Basmati Rice Meatballs with Bok Choy

Turkey-Basmati Meatballs with Bok Choy - In Her Chucks

Your turn:  What are some of your favorite green recipes?  Feel free to link up some of the CSA inspired meals that you are the most proud of.  Looking forward to drooling over your dishes :)

November Photo A Day Challenge: Day 21-30

Photo Challenge

It’s December!  Eek…where did 2012 go?  Thanksgiving is over, Christmas is around the corner and there is only a few short week’s until we ring in the New Year.  But even as quickly as the time has passed, being able to look back at all the pictures I have taken helps me to relive those moments. And while we continue on this journey, you can bet that I will have my iPhone with me snapping pics and making memories.

So before we say goodbye to November, let’s take a look at what the last few days looked like…

1.  Day 21: what I wore-  My style is pretty predictable.  Jeans, t-shirt and a pair of Chucks.  Sometimes I might get fancy and throw on a button down but for the most part I like to keep it comfortable and casual.

2.  Day 22: grateful-  I have so much to be grateful for.  And a plate of delicious food on my favorite holiday is always a good reminder for me to sit down and count my blessings.

3.  Day 23: black-  When you are hanging out on a farm for a week, it’s hard to find something black.  But Emmy the dog turned out to be the perfect subject.  Her favorite activity?  Chasing after pine cones that Harper and I skip across the driveway.  Oh, the life of a dog :)

4.  Day 24: a sound I heard-  While we were away, we would go out exploring everyday.  With 37 acres to cover, there is a lot to see.  On this particular day, Harper led me to this huge tractor pushing dirt.  It was quite loud to listen to but fun to watch.

5.  Day 25: sky-  After a great holiday with our family, it was time to hit the road…or the air.  I love the view from up in the sky.  The clouds.  The water.  The mountains.  Such a pretty sight.

6.  Day 26: in the cupboard-  Unfortunately, I picked up some yucky germs while we were away.  So all I wanted to do when I got home was stay in bed and sleep.  But I did get up to make myself a big pot of homemade Chicken and Rice Soup.  The best kind of medicine.

7.  Day 27: tree-  Living in California, you see a lot of palm trees.  You also see a lot of clear skies and nice weather…even in late November.  Just some of the many reasons why I LOVE the “Golden State”.

8.  Day 28: vehicle-  Harper loves to drive her Cozy Coupe all over town.  And who wouldn’t?  Get’s great gas mileage and turns on a dime…well as long as mommy isn’t pushing it ;)

9.  Day 29: big-  It looks like the wet and rainy season has finally hit.  It has rained pretty much all this week.  And my favorite way to keep warm is to sip on a big frothy latte.  Or as Starbucks calls it, a Venti Decaf Soy Latte.

10.  Day 30: on the wall-  To be honest, we don’t have much hanging on our walls.  I am pretty picky when it comes to art.  I like it simple and clean.  Freddie and I found these prints when we first got married and they reminded us of our wedding.  We had a black and white color scheme and black chandeliers were used as lighting for the reception.  I think we both agree that these are our favorite pictures in the house (besides family photos of course).

November Photo A Day Challenge: Day 11-20

20 days down, 10 to go.  Boy does time fly when you’re fun doing a photo challenge :)  What I love most about this project is that it is a fun way to look back at the month and remember all the fun things we did from a new and different perspective.  Look forward to many more photo challenges in the future.  And I hope you will play along.  Already shopping for a December photo challenge…any suggestions?

But before we jump to December, let’s check out what the middle of November was looking like…

1.  Day 11: night–  The best part of my night is snuggling up with my loves.  But apparently the best part of Harper’s night is snuggling up with her bubbles.  Her daddy had just bought her a few new bottles for her bubble machine and she wouldn’t part with the blue one.  Pretty much the sweetest thing I have ever seen.

2.  Day 12: drink- I don’t normally drink alcohol.  Not for any particular reason except for the fact that ice tea just happens to be my drink of choice.  Wild and crazy I know.  But since we were having company over for dinner, I wanted to pick up something that was new and different.  And the guy at Whole Foods highly recommended this Fox Barrel Blackberry Pear Cider.  In fact, he said they were award-winning!  I totally believe it.  Might have to rethink my original drink of choice.  Cause these things are GOOOOOOOD!

3.  Day 13: where you slept- I’m gonna be honest…I rarely make my bed.  And it’s a shame really because I don’t even have a top sheet, just a duvet.  It would be easy as pie to throw it over the bed and be done, but for some reason, I never get around to it.  Unless of course we are expecting company.  Then I’ll make sure my bed is made.  But otherwise…I like to keep it cozy :)

4.  Day 14: man-made- Ever since my success with homemade granola, I am on a mission to make as many of my snacks homemade as possible.  My newest venture?  Homemade granola bars (recipe coming soon).  Next experiment, homemade crackers.  Care to share your favorite recipe?

5.  Day 15: in your bag- Freddie is the ultimate packer.  The guy can fit an entire wardrobe in one suitcase.  It’s a fact. So he usually does all the packing for our trips.  But in an effort to plan ahead, while Freddie was at work the other day I took it upon my self to pack the suitcases myself.  And I have to say, I was pretty proud of the result.

6.  Day 16: the view from your window- I love a stormy day.  As long as I am in the comfort of my own home, or in this case car.  I have the pleasure of teaching music class down the street from the beach and couldn’t help but mosey on down to see the view in the rain.  I wouldn’t throw my beach towel down, but it was still a pretty sight.

7.  Day 17: the last thing you bought- There was a time, before I became a mom, that I used to shop for myself.  But now, it’s all about Harper.  And I wouldn’t have it any other way.  I get so excited to shop for new clothes for her it’s kind of embarrassing.  There seems to be a theme of stars going around, which I LOVE, and couldn’t pass up this adorable hat and mittens set (which she wore around the entire store).  Came in handy in the rain, too!

8.  Day 18: happened this weekend- Every year, for the last 4 or 5 years, we travel to Texas to see my sister, niece and nephews for Thanksgiving (although last year, we changed it up a bit and went for Christmas).  It is the one time of year that we can all get together and catch up.  I was a bit nervous to fly with Harper now that she is a toddler, but she was a total ROCKSTAR!  She loved looking out the window and pointing out the water, the clouds and the sky.  And of course, made tons of new friends.

9.  Day 19: something awesome- I thought I had seen and tasted almost every fruit out there.  Until I went for a walk on my sister’s farm and came across these vibrant, tennis ball looking things.  Turns out they are called osage oranges and they are pretty much the most awesome thing I have ever seen.  I have yet to try one but I am looking forward to experimenting with them.  Or displaying them on my kitchen table.

10.  Day 20: work/play- After a day of traveling and another day of relaxing, I had a ton of emails to attend to.  I spent a good part of the morning attending to business on the computer (in addition to writing this post).  Once I was done, I treated myself to an afternoon stroll.  I couldn’t help but crunch along in the leaves and enjoy the simple pleasures of fall.

Enjoy the rest of you week :)

30 Years, 30 Days

On September 29, 2012, just 30 days ago, I turned 30!  It was a lovely celebration and one I will never forget.

30 is kind of a big deal.  It is a major milestone and therefore the perfect time to reflect on the past, present and future.  It’s an opportunity to recharge, refocus and reorganize.  It’s the ideal moment to count your blessings and thank God for bringing me this far.

To commemorate this special occasion, my husband planned an amazing little getaway which included lots of surprises.  Not only did we get the chance to spend time as a family (which is a gift in itself) but it was also a nice to reconnect and relax.

Here’s a look at what we were up to for the long birthday weekend…

It’s a long standing tradition in our family to have breakfast in bed.  And to be honest, it’s probably one of my favorite traditions.  But this year we changed it up a bit.  This adorable little restaurant tucked away in the middle of the beautiful Crystal Cove was only minutes away from our hotel.  It was hard to deny the gorgeous views so we decided to enjoy a breakfast on the beach instead of breakfast in bed.  Eggs Benedict is always a favorite of mine and this one definitely lived up to my expectations.  Washed down with a tropical iced tea and my birthday breakfast was nothing short of perfect!

Once our tummies were full, Freddie and Harper dropped me off for a day at the spa.  It started with an Olivio Pedicure which was quite possibly the best pedicure I have ever had.  After my piggy toes were dry I had the chance to sit in the relaxation room and sip on some spa water before it was time for my 90-minute Aroma Intentions Massage (which by the way was PURE HEAVEN!).  The Aroma Intention that I chose was “rest full” and for the remainder of the weekend, that is exactly what I did.

While I was waiting for Freddie to pick me up after my luxurious afternoon at the spa, I was surprised by my mom who had traveled all the way from Portugal to help me celebrate my 30th birthday (my Uncle Joe and his girlfriend Brittani were also there to greet me).  I don’t think I have ever been so shocked in my life.  I was expecting to see my mom, but not until the weekend was over.  So you can imagine my reaction when I turned around and they were all standing at the front door.

Nothing says celebration quite like a yummy steak and mango margarita.  For my birthday dinner, Freddie made reservations at one of our favorite restaurants, Javier’s.  And if you can’t tell, I love the decor just as much as the food.  My Great Aunt and Uncle joined us for a delicious meal and fun filled reunion.

And just when I thought the day couldn’t get any better…My mom surprised me with the best birthday cake ever!

ps: it was a marble cake too….yum!

Since we were all in the Orange County area, we decided to take a trip to Disneyland the next morning.  Our first stop?  To get Harper her own set of ears (which never looked cuter!).  Then we were off to the Merry-Go-Round.  Unfortunately the experience wasn’t what we had hoped.  Harper was not a fan of the moving plastic horses.  However, she did like dancing to the music.  For our next ride, we thought Harper would get a kick out of “It’s a Small World” but she fell asleep while we were waiting in line.  Luckily, the third time was a charm, because Harper thoroughly enjoyed her ride on the Finding Nemo Submarine Voyage.  Our last stop was a ride on board the Disneyland Railroad.  Harper had a great time practicing her “Choo-Choos” and making friends with the conductor.

And of course, what is a trip to Disneyland without a souvenir?  Harper had her eye on one thing.  A balloon.  So $7 later we had ourselves a very happy little girl complete with Mickey balloon in hand (which lasted quite a long time…so I guess the $7 was worth it!).

If you ask me, 30 is looking pretty darn good so far.  My husband sure knows how to throw a party!  I am blown away by the time and effort he put into my birthday weekend and am forever thankful for his love and support.  Gonna be hard to top this one…

A birthday with my lovely family, yummy food and a waterfront view?  Can’t think of any better way to welcome in this new decade :)

Here’s to my thirties…Happy Birthday to me!

PS: Don’t forget to enter the giveaway! You have until the end of the week to get your entries in. Remember to leave a comment on the original post letting me know that you have completed the tasks. Your comments act as your entry into the giveaway. Good luck!
