    Everything looks so amazing! I cannot wait to start getting fruit as a part of my share :) Besides strawberries, we haven’t had any fruits yet.

  4. We’re supposed to have zucchini in our CSA box this week too–I’ll find out for sure this afternoon. My favorite way to eat it is raw–cut up in spears with a feta cheese/lemon juice dip that I make.

  5. I made two zucchini recipes this week, and will post them soon! As for both broccoli and beets, I’m a huge fan of slaws and cold salads. You can use the stems from the broccoli after using the florets for other recipes – just shred them like carrots. Same for beets.

      Can’t wait to see what you did with your zucchinis. Love the idea for slaws and cold salads for the beets and broccoli. Sounds like a good way to put the stems to use :)

  6. Blueberries! I simply cannot wait until we start the fruit box subscription next month. Most of it is supposed to come from a farm near the Idaho border but I don’t care … FRUIT! :)

    i am so jealous of your fruit. our box doesn’t include fruit i don’t think. so far all we’ve gotten is greens. not that i;m complaining. :)

  18. Your box looks fabulous this week! I’m just realizing I’ve never had opportunity to try beets. I should do that. I would probably put them in my soup or with roasted veggies as a first go. Maybe I’ll pick some up this week and try experimenting a bit.

    If I had my fingers in that, I think for the fruit, the blueberries would end up in oatmeal and pancakes, the others wouldn’t last long enough to go in anything, I can’t get enough fresh peaches and plums! They’d go with me to work every day for a sweet snack.

    The rest of the veggies would all get split up between roasted, stir-fried and soups. Might make an extra-special treat of the zucchini and make tempura. Wrapping the lettuce, carrots and zucchini up in rice paper would be another tasty way to eat them, raw and cool for summer. Just add a bit of asian dipping sauce!

      Wow! Thanks for all the fabulous ideas :) Beets have grown on me. Roasting them is probably my favorite way to eat them, aside from putting them in baked goods. Let me know how it works out!

  19. The zucchini fritters from Smitten Kitchen are very good, plus fast and easy to make. I also do a zucchini lasagna: http://redpenmamapgh.com/2010/07/12/meatless-monday-zucchini-lasagna/. it’s very tasty.

    My children love fruit, especially summer berries. I barely get them washed before they are eating them.

  20. Great looking box! 3 broccoli. I’d love to have to deal to 3 broccoli in a week.
