It’s the last Wednesday in June and the summer is flying by. Our weeks have been busy with music classes, family outings and lots of time outdoors. We have been taking full advantage of the warm weather and long days and are enjoying evening trips to the park or swinging on our back porch while Freddie fires up the grill. Summers are truly the best.
Our link party continues to grow as the weeks go by. Last week we had 69 link ups! And I drooled over every one. I only wish there was more hours in the day, more days in the week, and more room in my tummy to enjoy each and every recipe that was shared. You all are some awesome produce lovers! I am truly inspired. Thank you for linking up week after week. I hope you are having as much fun as I am.
And now onto the goods…
So much goodness in one place, it’s hard to know where to start. But the beets are jumping out at me. Probably because in last week’s party we had beet pancakes and beet red velvet cupcakes. Beets have never tasted so good! I can’t wait to try both recipes. I love when I get to make something new and different.
The blueberries and peaches won’t last long. In fact, Harper has already grabbed a handful of the blueberries for herself. And they are just how I like them, crunchy and sweet! I never have the heart to make anything with the blueberries because they are just too delicious on their own. But we have plans to go blueberry picking soon. So once I am up to my knees in blueberries, then I might go ahead and whip up a sweet treat.
We are having company over for dinner tomorrow night and I am trying to decide between serving the green beans or the broccoli. I happen to love both. I am sort of famous for my green beans, but broccoli might work better with my main dish. I am hoping to sneak in some pictures and share the recipe with the rest of you, so I don’t want to reveal the recipe for the main dish quite yet. But I will tell you that it includes plums…and it’s amazing :)
For the lettuce, I would love to try a lettuce wrap type of meal. There have been many recipes shared through the link party that it has inspired me to think differently about my lettuce. Can’t wait to see how it turns out.
As much as I love my Turkey Burgers and Zucchini Fries, I am looking forward to making a new dish with the zucchini. Again, there have been so many wonderful ideas posted, it’s hard to decide where to start. But the good news is, no matter what I choose, my tummy will be happy. For the carrots, I am going to stick with roasting. I was so impressed by my last batch, these little gems will have the same fate :)

Everything looks so amazing! I cannot wait to start getting fruit as a part of my share :) Besides strawberries, we haven’t had any fruits yet.
As much as I love strawberries, the day I started receiving summer fruits, was a great day!
We’re supposed to have zucchini in our CSA box this week too–I’ll find out for sure this afternoon. My favorite way to eat it is raw–cut up in spears with a feta cheese/lemon juice dip that I make.
That feta cheese/lemon juice dip sounds amazing! Where can I find the recipe?
I saw it in an Everyday Food cookbook. It’s basically 4 ounces of feta cheese blended with 2 Tbsp lemon juice and then thinned out with 2-4 Tbsp of water (depending on how thin/thick you want it) and seasoned with salt & pepper.

I made two zucchini recipes this week, and will post them soon! As for both broccoli and beets, I’m a huge fan of slaws and cold salads. You can use the stems from the broccoli after using the florets for other recipes – just shred them like carrots. Same for beets.
Can’t wait to see what you did with your zucchinis. Love the idea for slaws and cold salads for the beets and broccoli. Sounds like a good way to put the stems to use :)
Blueberries! I simply cannot wait until we start the fruit box subscription next month. Most of it is supposed to come from a farm near the Idaho border but I don’t care … FRUIT! :)

i am so jealous of your fruit. our box doesn’t include fruit i don’t think. so far all we’ve gotten is greens. not that i;m complaining. :)
Some shares only offer veggies with an additional fruit option. My CSA includes it all. But if you ask nicely, I might share :)
Your box looks fabulous this week! I’m just realizing I’ve never had opportunity to try beets. I should do that. I would probably put them in my soup or with roasted veggies as a first go. Maybe I’ll pick some up this week and try experimenting a bit.
If I had my fingers in that, I think for the fruit, the blueberries would end up in oatmeal and pancakes, the others wouldn’t last long enough to go in anything, I can’t get enough fresh peaches and plums! They’d go with me to work every day for a sweet snack.
The rest of the veggies would all get split up between roasted, stir-fried and soups. Might make an extra-special treat of the zucchini and make tempura. Wrapping the lettuce, carrots and zucchini up in rice paper would be another tasty way to eat them, raw and cool for summer. Just add a bit of asian dipping sauce!

My children love fruit, especially summer berries. I barely get them washed before they are eating them.
